start;">因为热爱，便步履不停。“我大学学的是烹饪专业，在五星级酒店跟随外籍厨师学习时，看到出餐方式很高大上，加上自己也储备了大量的西餐知识，就开始对西餐行业心生向往。”2001年，山东城市服务职院增设西餐相关课程，有一定经验的刘寿华便来到学校，承担起西餐课程的教学任务。“在学校的统筹下，大家凭着一腔热情，摸着石头过河，结合西餐行业的实际需求，尝试做出课程设计和实训规划。”学校陆续开设了西点、烘焙、咖啡、调酒等课程，西餐专业建设初见雏形。2007年，学校开设了山东省第一个西餐专业，由刘寿华负责西式烹调理论与实践等专业课程。</span></p><p 16px;">从第45届至第48届，连续四届世界技能大赛的磨砺，刘寿华打造出了一支戮力齐心、训练有素的世赛团队。“训练过程其实是非常艰苦且枯燥的，为了形成肌肉记忆，仅一个动作规范，孩子们往往就需要重复练习好多周，只为了把整套技术要领融会贯通、精益求精。”刘寿华看在眼里，疼在心里，在闭塞闷热或数九寒天的实训室里，他常常陪着选手们同吃同住。刘寿华认为，一名真正优秀的选手，吃苦耐劳的品质必须是放在第一位的，只有基本功打得牢靠，手才能稳得住，赛场上才能沉住气。</span></p><p 16px;">刘寿华深知独木不成林，育人还需团队的力量。西餐学院目前拥有一支朝气蓬勃、充满活力的年轻教师团队，其中有4位全国技术能手和9位山东省技术能手，这在其他职业院校中是非常少见的。从西餐学院这片沃土里成长起来的曲笛、丁阳、赵小璇、曲鉴、姜沛良等人，都在各自的专业领域大放异彩，在取得了省级、国家级大赛的多项荣誉后，他们选择留校育人来回馈母校的栽培。刘寿华欣慰地表示，这些孩子从这里走出去，又选择走回来，学校给他们提供了一个施展才干、展翅高飞的平台，他们愿意将自己精湛的技艺毫无保留地接续传承下去，这种工匠精神正是学校培根铸魂的成果。随着西餐的普及和发展，更是有了这样的传承，西餐专业已经成了山东城市服务职院的一块金字招牌，每一位学子拥有多样成才的选择权，整体就业率达100%。</span></p><p><br/></p><p><span
